Thanksgiving Weekend 2012

There has been much cooking and knitting this Thanksgiving weekend. I was in charge of the big feast this year. I haven't cooked a turkey since the disasterous Thanksgiving of 1999, but I've logged almost 13 years of cooking experience since then. I think I nailed it.

The Menu:

  • Turkey with Pancetta, Garlic and Rosemary
  • Roasted Root Veggies
  • Peas with Leeks
  • Mashed Potatoes with Butter
  • Cornbread Stuffing with Sausage and Sage
  • Regular Stuffing with Sausage and Mushrooms

The turkey was super moist and cooked at 350 only took 3 hours to roast. I'm making that turkey again for sure! I'm going to have to fight with my mom over who is going to roast the turkey.

I was super smart and prepared the stuffings, cut the veggies, and made the turkey rub the day before. Plus, I made the pumpkin pie the day before too, so I was remarkably relaxed. I felt on top of things for the whole day.

It was a great Thanksgiving spent with family and friends who we consider family. Looking back it makes me feel like such a grown up. Even if sometimes I still feel like I'm 15.

How was your Thanksgiving?

Thanksgiving was grand. And I made turkey pot pies with leftover turkey....which means I can occasionally cook.

What's going on now?

Miracles have happened and husbeast received and accepted a job offer at his dream company last week. He starts work soon. We are breathing sighs of relief and expecting great things ahead.

I'm knitting. I've been caring for my two sons, living at my MIL's house, volunteering at our local co-op preschool and gardening. Trying to find time to write and to redefine this blog to embrace my current reality.
